Way back in Spring, I decided I wanted to celebrate the Sunday after Thanksgiving in a special way. The way I desired is slightly different than the way it will transpire, but we will celebrate.
My desire was to have Mom sitting at Gram's dining room table for a meal. We managed to get her into the house for the first time this past Easter. Mom suffers the effects of M.S. which makes Gramma's front steps confounding. We borrowed a five foot wheelchair ramp. Things went awry beginning with the ramp being too short and Mom slowly sliding onto the front steps instead of her chair. By the time we realized Mom wasn't going to be standing up any time soon, she'd managed to skootch her bum up two steps. "Mom," I cried, "You are almost there!" We'd been focusing on getting her back into the chair. Into the house she skootched, to spend Easter on the living room floor. She dined like a queen, the coffee table her feast table. . Thinking about dried cherries and pistachios instead of raisins. This recipe is a nice background for celebration. | Rice Pudding 1 1/2 c cooked rice, 1 1/2 c milk, 1/3 c sugar, t salt. Thicken on medium heat, stirring occasionally. 1/2 c milk, 1 tempered beaten egg, 3/4 raisins. Stir constantly for 2-3 minutes. Remove from heat. 1 T. butter, 1/2 t vanilla. Add, stir and serve. |
